le email (così come TUTTI gli altri protocolli di comunicazione) hanno
già da tempo adottato un nuovo standard... riporto un estratto
dall'RFC 2277 "IETF Policy on Character Sets and Languages" (gennaio
1998):

3.1
All protocols MUST identify, for all character data, which charset is in use.
Protocols MUST be able to use the UTF-8 charset, which consists of
the ISO 10646 coded character set combined with the UTF-8 character
encoding scheme, as defined in [10646] Annex R (published in
Amendment 2), for all text.

tanto per essere chiari:
- l'RFC 821, che definisce semplicemente il protocollo SMTPe' del 1982.
- lo stesso 821 (e 822, che definisce il contenuto dei messaggi
e-mail) sono stati integrati da altri RFC. l'ultimo è il 5321
dell'ottobre 2008, che riporta, al paragrafo 2.3.9
(http://tools.ietf.org/html/rfc5321#section-2.3.9) :

   The terms "message content" and "mail data" are used interchangeably
   in this document to describe the material transmitted after the DATA
   command is accepted and before the end of data indication is
   transmitted.  Message content includes the message header section and
   the possibly structured message body.  The MIME specification (RFC
   2045 [21]) provides the standard mechanisms for structured message
   bodies.

- l'RFC 2045, a sua volta, riporta addirittura nell'abstract:

   Extensions, or MIME, redefines the format of messages to allow for
   (...)
   (4)   textual header information in character sets other than
          US-ASCII.

ma insomma direi che il discorso accentate/non accentate può
considerarsi ampiamente sviscerato e chiuso. non me ne voglia asbesto,
che stimo a dismisura ma che forse dovrebbe un po' aggiornarsi.
